Ingredients

1 lb rotini pasta

2 large chicken breasts

1 ½ cups Velveeta cheese, cubed

1 cup shredded mozzarella cheese

1 ¼ cups heavy cream

3 cloves garlic, minced

2 tbsp butter

1 tsp salt

½ tsp black pepper

1 tbsp chopped parsley (fresh or dried)


Instructions

1. Bring a large pot of salted water to a boil. Cook the rotini pasta until al dente, then drain and set aside.

2. Season the chicken breasts with salt, pepper, and optional garlic powder or paprika.

3. Heat a skillet with a bit of oil and sear the chicken until cooked through and golden brown. Remove and cut into bite-sized pieces.

4. In the same skillet, melt butter and sauté the garlic until fragrant.

5. Pour in the heavy cream, stirring frequently, then add Velveeta cubes and melt until smooth.

6. Stir in shredded mozzarella until fully melted and the sauce is thick and creamy.

7. Add the drained pasta to the skillet and stir to coat with the cheese sauce.

8. Sprinkle in chopped parsley and mix well.

9. Add the chicken to the skillet — either arranged on top or stirred in — and serve hot.

Notes

Use freshly grated mozzarella for a smoother melt and better flavor.

To save time, use rotisserie chicken instead of cooking from scratch.
