Ingredients

400g rotini pasta

2 boneless skinless chicken breasts

1 ½ tablespoons Cajun seasoning

2 tablespoons olive oil

1 ½ cups heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

3 garlic cloves, minced

3 tablespoons chopped fresh parsley

½ teaspoon red pepper flakes (optional)

Salt and black pepper to taste


Instructions

1. Rub chicken breasts with Cajun seasoning and a pinch of salt and pepper.

2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken until fully cooked and browned. Remove and rest.

3. Boil rotini pasta in salted water until al dente. Drain and set aside.

4. In the same skillet, add remaining olive oil and sauté minced garlic. Pour in heavy cream and stir.

5. Slowly whisk in mozzarella and Parmesan until sauce is smooth and creamy.

6. Stir in red pepper flakes and 2 tablespoons of parsley. Adjust seasoning with salt and pepper.

7. Add cooked pasta to the sauce and toss well to coat.

8. Slice the rested chicken and place over the pasta. Garnish with remaining parsley.

9. Serve hot with extra Parmesan if desired.
