Ingredients

300g boneless chicken thighs or breasts

250g rotini pasta

3 cloves garlic, minced

2 jalapeños, finely diced (remove seeds for less heat)

1 cup shredded sharp cheddar cheese

1 cup heavy cream

2 tablespoons butter

1 tablespoon Cajun seasoning

1 tablespoon olive oil

2 tablespoons chopped parsley

Salt and black pepper to taste


Instructions

2. Grill or pan-fry chicken on medium-high heat until golden and cooked through. Set aside.

3. Boil rotini pasta in salted water until al dente. Drain and set aside.

5. Pour in heavy cream, bring to a simmer, and stir in cheddar cheese until melted and smooth.

6. Add pasta to the sauce, tossing to coat every piece in the cheesy mixture.
