Ingredients

12 oz penne pasta

1 lb ground beef

1 can (10 oz) Rotel tomatoes with green chilies

4 oz cream cheese

1 cup shredded cheddar cheese

1 small onion, chopped

2 cloves garlic, minced

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil


Instructions

1. Cook the penne pasta in salted boiling water until al dente. Drain and reserve 1/2 cup of pasta water.

2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant.

3. Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon.

4. Stir in the Rotel tomatoes and let simmer for 5 minutes.

5. Add cream cheese and stir until melted. Mix in shredded cheddar until sauce is smooth.

6. Stir in the cooked pasta. Add reserved pasta water if needed to thin the sauce.

7. Season with salt and pepper. Serve hot, optionally garnished with parsley.

Notes

Use mild Rotel for a less spicy version.

Substitute with ground turkey or chicken if desired.

Reheat with a splash of milk to keep it creamy.
