Description

Ingredients

225g medium shrimp, peeled and deveined

250g pasta shells

150g fresh spinach

200g mushrooms, sliced

240ml heavy cream

60g grated parmesan cheese

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

1. Boil pasta shells in salted water until al dente. Drain and set aside.

2. In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add mushrooms and cook until browned, about 5–7 minutes. Remove and set aside.

3. In the same skillet, add remaining butter and minced garlic. Cook for 30 seconds until fragrant.

4. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove and set aside.

5. Lower heat, pour in heavy cream. Stir in parmesan cheese, salt, and pepper. Simmer until slightly thickened.

6. Add spinach and cook until wilted. Return mushrooms and shrimp to skillet.

7. Stir in cooked pasta shells. Toss gently to coat everything in the sauce.

8. Serve hot, garnished with parsley and extra parmesan if desired.

Notes

Don’t overcook the shrimp—remove them as soon as they turn pink to avoid rubbery texture.

Add cream gradually and simmer gently to avoid curdling.

Feel free to add a pinch of red pepper flakes for a hint of heat.
