Ingredients

300 g rotini pasta

500 g chicken breast cut into cubes

200 g Velveeta cheese cubed

150 g shredded mozzarella cheese

3 cloves garlic minced

3 tbsp butter

1 cup milk or heavy cream

2 tbsp fresh parsley chopped

1 tsp salt

1/2 tsp black pepper


Instructions

1. Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente according to package instructions. Drain, reserving 1/2 cup pasta water.

2. Season chicken cubes with salt and pepper. In a large skillet over medium-high heat, melt 1 1/2 tbsp butter and sear chicken until golden brown and fully cooked. Remove from skillet.

3. In the same skillet, melt remaining butter. Add minced garlic and sauté until fragrant.

4. Lower heat and stir in milk (or heavy cream) and Velveeta cubes. Stir until cheese is fully melted and smooth.

5. Add shredded mozzarella and stir until melted. If sauce is too thick, add reserved pasta water a little at a time.

6. Toss cooked pasta in sauce, then fold in chicken. Garnish with fresh parsley before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream.

Add vegetables like spinach, broccoli, or peas for extra nutrition.

Use freshly grated mozzarella for the best melting quality.
