Ingredients

1 head cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley (optional, for garnish)

1/2 cup Greek yogurt or sour cream

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon chopped dill or parsley (for sauce)

Salt and pepper to taste (for sauce)

Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Wash and cut the cauliflower into bite-sized florets.

3. In a large bowl, toss the cauliflower with olive oil, paprika, garlic powder, onion powder, salt, and pepper.

4. Spread cauliflower evenly on the baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

5. While baking, combine Greek yogurt or sour cream, minced garlic, lemon juice, chopped herbs, salt, and pepper in a small bowl to make the garlic sauce.

6. Chill the sauce until ready to serve.

7. Once cauliflower is roasted, transfer to a platter, garnish with chopped parsley, and serve with garlic sauce.

Notes

Be sure to cut the cauliflower into similar-sized florets to ensure even baking.

For extra crispiness, use a wire rack over the baking sheet.

Double the garlic in the sauce if you’re a true garlic lover.
