Ingredients
2 chicken thighs
2 packets ramen noodles
6 cloves garlic, minced
4 cups chicken broth
3 tablespoons soy sauce
1/2 cup heavy cream or coconut milk
1 tablespoon chili oil or sriracha
2 green onions, chopped
1 cup spinach
1/2 cup sliced mushrooms
2 large eggs
1 teaspoon sesame oil
Instructions
1. Season the chicken thighs with soy sauce, garlic, chili oil, and sesame oil. Sear or grill until charred and cooked through. Slice into strips.
2. In a saucepan, sauté the minced garlic until golden and fragrant. Add chicken broth, soy sauce, and chili oil. Stir in heavy cream or coconut milk. Simmer for 10 minutes.
3. Cook the ramen noodles in a separate pot until just tender. Drain and set aside.
4. Soft-boil the eggs by placing them in boiling water for 6–7 minutes. Transfer to an ice bath, peel, and slice in half.
5. In serving bowls, add noodles first. Pour over hot garlic broth. Top with chicken, eggs, mushrooms, spinach, and green onions. Drizzle extra chili oil if desired. Serve immediately.
