Ingredients
2 chicken breasts, cubed
12 oz rigatoni pasta
4 garlic cloves, minced
4 tbsp unsalted butter
1 tbsp olive oil
1 cup grated Parmesan cheese
2 tbsp chopped fresh parsley
1 tsp salt
½ tsp black pepper
Instructions
1. Season cubed chicken with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat, then cook chicken until golden and fully cooked. Set aside.
3. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve ½ cup pasta water, then drain.
4. In the same skillet, lower heat to medium and melt butter. Add minced garlic and sauté for 1 minute until fragrant.
5. Return chicken to skillet, add rigatoni, and toss everything to combine. Add reserved pasta water as needed to loosen the sauce.
6. Stir in grated Parmesan until melted and well coated.
7. Garnish with chopped parsley and serve hot.

Save some pasta water—it helps the sauce cling to the pasta.
