Ingredients
1 lb chicken breast, cut into bite-sized pieces
1/2 cup all-purpose flour
1/4 cup cornstarch
1/2 tsp salt
1/2 tsp black pepper
2 tbsp cooking oil
1/3 cup honey
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp apple cider vinegar
1/2 tsp red chili flakes (or 1 tsp hot sauce)
8 oz rotini pasta
2 cups broccoli florets
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
2 tbsp butter
1 cup heavy cream
3/4 cup grated Parmesan cheese
1 tbsp Cajun seasoning
2 tbsp chopped fresh parsley or basil
Instructions
1. Cut chicken into bite-sized pieces and toss with flour, cornstarch, salt, and pepper until evenly coated.
2. Heat oil in a large skillet over medium-high heat. Fry chicken pieces until golden brown and cooked through. Set aside on a paper towel-lined plate.
3. In a small saucepan, combine honey, garlic, soy sauce, apple cider vinegar, and chili flakes. Simmer until thickened. Pour over chicken and toss to coat.
4. Preheat oven to 400°F. Toss broccoli with olive oil, salt, and pepper. Roast for 15 minutes until crispy-tender.
5. Cook rotini according to package instructions. Drain and set aside.
6. In a separate saucepan, melt butter over medium heat. Stir in heavy cream and Cajun seasoning. Let it simmer, then add Parmesan and stir until creamy.
7. Add cooked pasta and roasted broccoli to the Alfredo sauce and toss to combine.
8. Serve the pasta on one side of the plate and the glazed chicken bites on the other. Garnish with fresh parsley or basil.
Notes
For extra crispy chicken, double fry the pieces in small batches.
Adjust the spice level by increasing or decreasing chili flakes.
Add a splash of cream when reheating pasta to keep the sauce silky.
