Ingredients

2 large chicken breasts, diced

2 tablespoons lemon pepper seasoning

2 tablespoons olive oil

12 ounces rotini pasta

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

1 cup roasted red peppers, blended

1 tablespoon Cajun seasoning

3 cloves garlic, minced

2 tablespoons butter

2 tablespoons fresh parsley, chopped

1 lemon, cut into wedges for garnish


Instructions

1. Season the diced chicken breast with lemon pepper seasoning.

2. Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.

3. Boil the rotini pasta according to package instructions. Drain and set aside.

4. Blend the roasted red peppers until smooth.

5. In the same skillet, melt butter and sauté garlic for 1–2 minutes.

6. Pour in heavy cream, blended peppers, and Cajun seasoning. Simmer for 3–5 minutes.

7. Stir in Parmesan until sauce is smooth and creamy.

8. Add pasta and chicken into the sauce, mix well and heat together.

9. Garnish with chopped parsley and lemon wedges. Serve hot.

Notes

Don’t overcook the pasta; keep it al dente for best texture.

Blend the red peppers until very smooth for a silky sauce.

Use freshly grated Parmesan for optimal melt and flavor.
