Ingredients

1/2 cup unsalted butter

1 cup brown sugar

2 tablespoons light corn syrup

1 loaf thick-cut brioche or challah bread

5 large eggs

1 cup heavy cream

1 cup whole milk

2 teaspoons vanilla extract

1/4 teaspoon salt


Instructions

  1. Melt butter in a saucepan over medium heat. Stir in brown sugar and corn syrup until smooth. Pour into a greased 9×13-inch baking dish.
  2. Slice bread into thick slices and arrange over the caramel layer, slightly overlapping.
  3. In a large bowl, whisk eggs, heavy cream, milk, vanilla, and salt until smooth.
  4. Pour custard evenly over the bread, pressing down lightly to soak.
  5. Cover and refrigerate overnight (at least 8 hours).
  6. Preheat oven to 350°F (175°C). Bake uncovered for 35–40 minutes until golden and set.
  7. Let cool slightly before serving, spooning caramel sauce from the bottom over each portion.

Notes

Use day-old bread for better texture and absorption.

For extra flavor, add a pinch of cinnamon or nutmeg to the custard.
