Ingredients

400g beef sirloin or ribeye, cut into cubes

250g linguine pasta

3 tablespoons unsalted butter

4 garlic cloves, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley

1/4 teaspoon chili flakes (optional)


Instructions

1. Heat olive oil in a skillet over medium-high heat. Pat beef cubes dry and season with salt and pepper. Sear until browned on all sides. Remove and set aside.

2. In a large pot, boil salted water. Cook linguine until al dente. Reserve 1 cup of pasta water, then drain.

3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.

4. Stir in heavy cream and simmer for 3–5 minutes. Add Parmesan and a bit of pasta water to adjust sauce consistency.

5. Add cooked linguine to the sauce and toss well. Return beef to the pan and stir to combine. Let everything simmer for 2 more minutes.

6. Garnish with chopped parsley and chili flakes if using. Serve hot with extra Parmesan on top.

Notes

Use freshly grated Parmesan for the best flavor and melting texture.

Don’t overcook the beef — a quick sear keeps it juicy and tender.

For a thinner sauce, add more reserved pasta water slowly until you reach the desired consistency.
