Ingredients
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
8 ounces linguine pasta
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 cup cherry tomatoes, halved
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Pat chicken dry and coat with Cajun seasoning.
2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes per side. Set aside to rest.
3. Cook linguine in salted boiling water until al dente. Drain and set aside.
4. In the same skillet, sauté garlic for 1 minute. Add cream and bring to a simmer.
5. Stir in parmesan cheese until melted and smooth.
6. Add linguine to the sauce and toss to coat evenly.
7. Fold in cherry tomatoes and half the parsley.
8. Slice the chicken and place on top of the pasta.
9. Garnish with remaining parsley and freshly cracked black pepper.
10. Serve hot.
